This rolled chicken cordon bleu is a versatile recipe that you can make so many ways and is a great meal prep item because it is so quick and freezes well. I confess I am a bit of a picky eater and you can easily change this recipe to suit your tastes.
These rolled chicken cordon bleu are easy to make for a quick dinner or on your meal prep day. They can get prepared, put in a glass bakeware dish and frozen so you can just throw them in the oven for dinner. A true life saver for me during the week for a real filling meal that is fast.

What cheese is best to use with Chicken Cordon Bleu?
The traditional cheese is usually swiss cheese. You can use smoked gouda or mozzarella cheese too.

An easy meal prep dish that is a snap to whip up and freeze for a fast weekday dinner.
- 4 boneless whole chicken breasts Cut lengthwise
- 4 slices swiss cheese
- 4 slices ham
- 1 egg
- 1/4 cup egg whites
- 1/2 cup Panko
- 1/4 cup powdered parmesan
- 1/4 tsp garlic salt
Preheat oven to 375 degrees
Cut each full chickenbreast lenthgwise to make them into thin cutlets.
Take each cutlet and place it between 2 pieces of wax paper and pound slighty flat. Not too thin or it will fall apart.
On each cutlet lay a half a slice of ham and a half a slice of swiss cheese. Roll up and set aside seam side down.
Mix the egg and egg whites in a small bowl.
In a separate bowl mix the panko, garlic salt and the parmesan.
Take each rolled chicken breast and dip it in the egg wash, then roll it in the panko mixture. Repeat for all - setting them seam side down.
Place seam side down on a cookie sheet and bake for 25-30 minutes or until a minimun internal temperature of 165 is reached.
For meal prep you can place these in an oven proof container and freeze for a quick dinner.
If baking from frozen you will need to bake them for about 50-60 minutes or until a minimun internal temperature of 165 is reached.
